PARTY VEGETABLE SALAD

Ingredients:
A LITTLE LETTUCE SLICES OF RAW TOMATO 1 KG POTATOES (BOILED AND MASHED FINE) 1 TBLSP PREPARED MUSTARD 1 CUP COLD MILK SALT TO TASTE 2 CUPS CAULIFLOWER FLOWERETS 1 CUP SHELLED GREEN PEAS 1 CUP DICED CARROTS 1 CUP DICED TURNIPS 2 CUPS BASIC MAYONNAISE (RECIPE 5) 1 CUP CHEESE (CUT INTO STRIPS) 2 CUPS FINELY CUT CABBAGE 1 CUP DICED CUCUMBER BEETROOT STRIPS (PARBOILED)
Preparation :
Line a large sald platter with lettuce and decorate the edges with tomato slices.Beat the mashed potaotes with the mustard,milk and salt till light and fiuffy. Make a wall of the potato mixture all around the lettuce platter, just below the tomato slices. Set aside,covered with a wet muslin cloth. Mix the caulfflower,peas, carrots and turnips and parboil in salted water drain our excess water and allow the vegetables to cool. In a large bowl toss together the vegetables and cucumber. Heap thismixture onto the prepared sllad platter and garnish with beetroot strip just before serving.
