COLD CUCUMBER SOUP [Calorie Count: 76]
(preparation time: 10 minutes, cooking time: 10 minutes, serves 6.)

Ingredients:


1 KG. FRESH CUCUMBER
1/2 LITRE FRESH CURDS
1 TEACUP SKIM MILK
1 TABLESPOON CHOPPED CAPSICUM
1 TABLESPOON BUTTER
SALT TO TASTE
A FEW MINT LEAVES FOR TOPPING (OPTIONAL)


Preparation :
Chop one cucumber finely. Cut the remaining cucumbers into big pieces. Add 3 teacups of water to the big cucumber pieces and cook until soft. When soft, blend in a liquidiser. Cool. Add the curds, milk and salt and beat well. Heat the butter and fry thefinely chopped cucumber and the capsicum for 1/2 minute. Add to the soup. Chill. Chill.
