CHICKEN SANDWICH [Calorie Count: 293]
(1 - chicken sandwich with pesto)

Ingredients:


3/4 CUP -- FRESH BASIL, FIRMLY PACKED
4 TBSP -- REDUCED-FAT MAYONNAISE
2 TBSP -- LEMON JUICE
1 CLOVE -- GARLIC MINCED
1 TBSP -- WATER
3/4 TSP -- BLACK PEPPER
10 OZ -- CHICKEN BREAST SKINLESS BONELESS SLICED THIN
8 SLICES -- CRUSTY SENOLINA BREAD
1 CUP -- TOMATO, CUT INTO 8 THICK SLICES


Preparation :
Preheat the broiler. Spray a jelly-roll pan with nonstick spray. In a food processor,combine the 3/4 cup of basil with the mayonnaise, lemon juice, garlic, water and 1/2 tsp. Of the pepeer; process until smoothly pureed. Set aside 4 tbsp. Of the pesto ina cup. Arrange the chicken cutlets in a single layer on the prepared pan. Using the pesto in the cup, spread 1 tbsp.Of the pesto over each cutlet. Broil the chicken 4 to 5 inches from the heat source, without turning, for 4 to 5 minutes, or just untilcooked through. Spread the remaning pesto on the side of each slice of bread. Then top four of the bread slices with one-fourth of the chicken and two slices of tomato. Sprinkile the sandwiches with the remaining 1/4 tsp. Pepper and top each sandwichwith a second slice of bread. Makes 4 servings.
