BAINGAN RAITA [Calorie Count: 76]


Ingredients:


CUP PULP OF BRINJAL (BAIGAN)
1 GRATED ONION
1 TSP GRATED GINGER
1 TBSP MINT LEAF PASTE
1 TBSP CORIANDER LEAF PASTE
TSP OIL
2- CUPS CURD
1 TSP CUMIN POWDER
TSP PEPPER POWDER
SATL TO TASTE


Preparation :
Roast the brinjal over the gas flame, held on a skewer, or bake it in an oven till the skin is roasted. Remove the skin and mash the pulp. Heat the oil, fry the grated onion and ginger till transparent. Add the mashed brinjal pulp to it. Strain the curd. Add all the spices to it along with the onion and brinjal pulp. Add the greens paste (mint and coriander) and serve chilled.
